Chocolate Bread & Butter Pudding

Preparation time: 30 minutes

Cooking time: 30-40 minutes

1.5L shallow dish (ovenproof)

4-5 pain au chocolat (thinly sliced)
1 large egg yolk
3 large whole eggs
90g caster sugar
80g cocoa powder
80g dark chocolate, broken into small pieces
300ml double cream, heated until just boiling
100g roasted almonds

1. Preheat the oven to 150°C (300°F).
2. Arrange the slices of pain au chocolat in overlapping layers in the dish.
3. Beat the egg yolk, whole eggs and sugar together in a large bowl.
4. Add cocoa powder and chocolate, and beat in the hot cream.
5. Slowly pour mixture over the bread.
6. Leave to stand for 20 minutes to allow the bread to soak up the chocolate custard.
7. Sprinkle with roasted almonds and bake for 30-40 minutes.
