Madeleine au Thé Matcha (Green Tea Madeleines)

Ingredients
90g Flour
10g Matcha (Japanese green tea in powder)
3g Baking Powder
100g butter
2 large eggs
120g Caster sugar
Method

Sieve the flour and baking powder together into a bowl with the matcha. Melt the butter.

Whip the eggs with the sugar for about 5 minutes and fold in the flour.

Mix in the melted butter until the mixture is completely smooth and incorporated.

Store in the fridge until the next day.

Day two: preheat the oven to 240C and butter the madeleine tray.

Fill the molds up to ¾ and place in the oven. Immediately reduce the temperature to 220C and bake for 7 to 8 mins.

Remove the tray from the oven and leave to cool slightly before turning the madeleines out on to a cooling rack.
