Sticky Choc Coke Cake

(makes 12/16 portions)
Ingredients
375g self raising flour
4 tablespoons cocoa powder
1 teaspoon bicarbonate soda
225g soft brown sugar
225g butter
300ml Diet Coke
225ml milk
3 medium eggs
1 teaspoon vanilla
Method

Preheat oven to 180C

Line 20cm round cake tin with a round cake liner

Sift flour, cocoa, bicarbonate soda into a bowl and then add sugar and mix together

Melt butter in a saucepan then stir in coke. DO NOT BOIL. Remove from heat

Mix together milk, eggs and vanilla

Mix cake mixture into flour mixture quickly then add the milk mixture and carefully mix all together

Pour into cake tin and bake for approx 50 minutes or use a skewer insert into centre of cake - if it comes out clean the cake is cooked
