Tonka Ganache

Ingredients
250g whipping cream
225g dark chocolate
25g trimoline
90g soft butter
5 grated Tonka beans
Method
1. Boil cream, with the grated Tonka and infuse for ten minutes
2. Pass the cream & pour onto chocolate and Trimoline.
3. Cool to 55°C
4. Blitz the butter into the mix and leave overnight to set.
