Bara Brith

Ingredients
1lb mixed fruit
1/2 pt tea (strong) – ‘Welsh Brew’
2 tablespoons marmalade - ‘Celtic woodman marmalade’
6 tablespoons dark brown sugar
1lb self-raising flour – ‘Bacheldre’
1 free range egg
Honey to glaze – ‘Hill top honey’
Method

Place the fruit, sugar, marmalade, spice and sugar in a bowl.

Pour the hot tea over it

Allow to soak overnight

Mix in the egg and flour

Divide into 1lb loaf tins

Bake for 45-60 mins on 180

Remove from the oven and immediately glaze with honey

Allow to cool
-
Serve with Bodnant Welsh Foods very own butter (cheese is a traditional accompaniment)
